Not sure if it would work on more delicate rabbit but when I saw him do it to the lamb rack I just sat there with my mouth open going "no frickin way". You basically just wrap the string around the base of the bone really tight and then just pull it off and all the meat and sinew and everything just slides off leaving the most perfectly clean bone. It was insane.
